Blueberry Ice Cream

Cooking Instructions

Combine blueberries and sugar in a small saucepan and bring to medium heat. As it boils, use a potato masher to smash the blueberries as completely as possible.

Boil for about 10 minutes, smashing once in a while and keeping it stirred so the sugar doesn't burn.

Strain the blueberry mixture, discarding the solids and retaining the syrup. Be thorough to get as much syrup as possible, and be careful because this syrup is boiling hot and sticky, and it will stain anything it contacts.

In a separate mixing bowl, whisk together the cream, milk, vanilla, and salt until slightly foamy.

Let the syrup cool for a few minutes, then pour it into the dairy mixture and whisk it up again.

Pour this mixture into an ice cream machine and follow it's instructions to finish the ice cream. Things work best if the mixture is chilled for a while beforehand. Be sure to freeze the finished product overnight and enjoy it the next day!

Back in the late 70's, early 80's, there was this ice cream shop in the Provincetown section of Cape Cod, called The Big Bad Wolf. I barely remember it, but my family loved it. Supposedly, they had the best ice cream.To this day, one of my brothers still raves about their black raspberry ice cream. We have tried it at other places, but he claims that they do not taste the same. BBW had the best.15 years ago, when I first got an ice cream maker, I was determined to make my own version. First obstacle? Black raspberries are hard to come by in NYC. Solution? My pops suggested that I use black raspberry jelly. Second obstacle? That jelly is hard to find around here, unless you want to buy an overpriced brand. When I am lucky enough to find the jelly, I have made the ice cream.This past year, Amazon started selling the jelly for a great price. That was a game changer. I have been making this for about 15 years, using a variety of cranberry "purees".I have used fresh cranberries, canned whole or jellied cranberry sauce, jellies, and jams for my puree. They are all very good in their own unique way. Use whichever one you are most comfortable using. Also, if possible, use heavy cream and regular milk. It makes a huge difference if you try to cut back on the fat. If you have to cut back on the fat, then that is cool but realize that it will not be as creamy and rich. I found out the hard way.Prepare yourself for a rich, creamy, tart, and sweet ice cream.
