Ingredients

4 servings
  1. 2boneless skinless chicken breasts, cubed
  2. 2 tbspvegetable or olive oil
  3. 2medium onions, chopped
  4. 1/2 tspminced garlic (or more if you like)
  5. 1 1/2 cupeach of any 3 vegetables of your choice (I used Chinese cabbage, broccoli, red bell pepper)
  6. 1/4 tspground black pepper (or to taste)
  7. 2 cupcooled cooked white rice
  8. 1 1/2 tbspsoy sauce
  9. 1 cuproasted cashews

Steps

30 mins
  1. 1

    Heat oil on medium-high, sauté onions for 1 minute; add chicken, sauté until lightly browned.

  2. 2

    Add all remaining vegetables and and cook until crisp.

  3. 3

    Add rice, making sure any large clumps are broken up. Fry for 2 minutes.

  4. 4

    Add soy sauce, mix through all ingredients well. Add cashews, and fry another minute.

I live in Toronto, Canada with my husband and three beautiful cats...but no kids.Recently, I started on the ketogenic diet, so I had to remove many of my favorites, which contained loads of carbs and sugar. Before I got on this diet, I posted some of my own recipes that are not Keto friendly, so I cannot make them anymore, but I will not remove them from here. I'll leave them for others to see and try.
