Ingredients

  1. 2 cupall purpose flour
  2. 1/3 cupyellow cornmeal
  3. 1/2 tspsalt
  4. 2 1/2 tspbaking powder
  5. 1/3 cupchilled butter, cut into small pieces
  6. 1/2 cupmilk
  7. 2 tbsphoney
  8. 1 cuppeeled and mashed cooked sweet potato

Cooking Instructions

    Preheat oven to 400°F.

    Lightly spoon the flour into a dry measuring cup and level with a knife.

    Place in a medium bowl.

  4. 4

    Add the cornmeal, baking powder, and salt.

  5. 5

    Mix well.

  6. 6

    Cut in the butter with a pastry blender or 2 butter knives until the mixture looks like a course meal.

    Add the sweet potato, milk, and honey.

    Stir until just combined.

    Turn the dough onto a heavily floured work surface and knead lightly only 5 times, otherwise the dough will get tough.

    Pat the dough into a 9 inch square and cut into 16 squares.

    Place biscuits on a baking sheet.

    Bake until golden brown, about 20 minutes.

    Serve hot from the oven with honey, butter, or both.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
