Ingredients

  1. 1 smallonion
  2. 4 clovegarlic
  3. 2bell pepper, any color
  4. 1 cuptomato sauce
  5. 1 canwhite bean, such as cannelini or navy beans (14.5 oz)
  6. 2 cupchopped frozen spinach
  7. 1 1/3 tbspbasil, dried (half amount for fresh)
  8. 6 cupvegetable broth
  9. 3 tbspolive oil
  10. 2celery stalks
  11. 4 ozany dried pasta (bite sized, such as seashells)
  12. 1parmesan cheese, for garnish
  13. 1/2 tspsalt

  1. 1

    Prepare pasta according to package directions.

  2. 2

    While pasta is cooking, rinse and drain beans;set aside.

  3. 3

    Dice onion, bell pepper, and celery; set aside.

  4. 4

    Mince garlic; set aside.

  5. 5

    Add the oil to a large saucepan on medium heat.

  6. 6

    Sauté onion, bell pepper, celery and garlic for 5- 7 minutes or until the onions are translucent.

  7. 7

    Reduce heat and add tomato sauce, broth, salt, spinach, basil, and beans.

  8. 8

    Cover and simmer 15 minutes.

  9. 9

    Stir in pasta and heat until warmed through.

  10. 10

    Serve with a garnish of Parmesan cheese.
