Ingredients

1 serving
  1. 2 mediumsized cold baked potatoes (a bit smaller than a normal jacket potato).
  2. 4 tbspcreme fraiche (I actually used Lake District quark, it's creamier and cheesier)
  3. 1/2 tspgarlic powder
  4. 1/2a small onion, chopped
  5. 40 gramsgrated or crumbled cheddar cheese
  6. 50 gramsthick cut ham, chopped into small chunks (out chopped cooked bacon if you prefer)
  7. 1salt and pepper to taste

  1. 1

    Preheat oven to 180°C.

  2. 2

    Cut potatoes in half length ways, and scoop out the middle of the potatoes, taking care not to pierce the skin.

  3. 3

    In a bowl, add the potatoes insides, and all the other ingredients (except your ham).

  4. 4

    Use a hand blender to mix until creamy and smooth.

  5. 5

    Using a spoon, mix in your ham.

  6. 6

    Spoon the mixture back into the skins.

  7. 7

    Bake in the oven for 15-20 mins.

  8. 8

    NB: you may wish to top your skins with cheese - I prefer not to, but it's up to you!
