After Christmas, like I'm sure many others do, I had plenty of cheese leftover so decided to throw this recipe together! Perfect way to use up leftovers. I'm also a bit frugal, drive my boyfriend mad, but also tend to keep broccoli stalks in the freezer, which I also used.

Ingredients

8 servings
  1. 4brocolli
  2. 2 cupmilk
  3. 4 cupchicken stock
  4. 1potato
  5. 3leeks
  6. 2 tbspbutter
  7. 1 cupsingle cream
  8. 1/2 boxrouda
  9. 1/2 boxgouda
  10. 1carrot
  11. 1 tbspflour
  12. 1/2 boxbrie (but can use any selection of cheese you have available)
  13. 1 pinchsalt/pepper (seasoning)

Cooking Instructions

    chop all vegetables.

  2. 2

    put broccoli, leeks, onion and butter in saucepan. heat gently until onions have softened. (recommend 5 mins)

  3. 3

    add chicken stock and milk. let simmer.

  4. 4

    add carrots and potatoes and let simmer unti soft.

  5. 5

    add flour.

  6. 6

    chop cheese and add one at a time, hardest cheese first.

  7. 7

    keep simmering until cheese melted. then use hand blender to blend together.

    season as required, and serve.
