Autumn Harvest Beef and Pork Roast with Vegetables

Ingredients

  1. 1-1/2 poundpork roast
  2. 11 ouncesstrip steak
  3. 3large carrots
  4. 2large Yukon Gold potatoes
  5. 2 leafBay leaves crumbled
  6. 1 teaspoonground black pepper
  7. 1 teaspoonsalt
  8. 3 stalkscelery chopped
  9. 1 teaspoonmustard powder
  10. 30 ouncesbeef broth
  11. 1 teaspoonground allspice
  12. 1large onion roughly chopped
  13. 1 teaspoonWorcestershire sauce
  14. 1 stickbutter
  15. 1 teaspoonmarjoram
  16. 1 tablespoonminced garlic
  17. 15 ouncescorn
  18. 1/4 cupSauvignon merlot
  19. 1/2 cupflour
  20. 1/2 cupextra Virgin olive oil

Cooking Instructions

  1. 1

    Cube the beef and Pork season with the spices, bay leaves, and set aside.

  2. 2

    Peel and chop the onion and carrots. Cube the potatoes. Put in pot with heat.

  3. 3

    Add the butter, broth and all the ingredients except the merlot, olive oil, and flour.

  4. 4

    Bring to a boil. Boil 7 minutes stirring occasionally.

  5. 5

    Add the merlot and simmer for 30-45 minutes covered stirring occasionally.

  6. 6

    Mix the oil and flour to form a paste like consistency and pour into the stew to thicken the stew stirring constantly.

    Let rest for 10 minutes

    Serve I hope you enjoy! This goes well with the Autumn Soda Bread recipe.
