Ingredients

  1. Pie crust
  2. 1 cupall-purpose flour
  3. 1/4 tspsalt (slightly heaping)
  4. 1/4 tspsugar (slightly heaping)
  5. 1/8 tspbaking powder (heaping)
  6. 2 tbspmilk or water
  7. 3 1/2 tbspbutter (melted), or margarine (melted), or oil
  8. Pie filling
  9. 2 cupto 2 1/2 cups berries, divided (strawberries should be hulled and quartered, cherries--pitted)
  10. 1/3 cupsugar or sweetener
  11. 1 1/2 tbspcornstarch
  12. 1 pinchsalt
  13. 1/2 tspvanilla extract
  14. 1/2 tbsplemon juice
  15. 1/4 tspcinnamon (if using strawberries or cherries, omit and add 1/8 teaspoon almond extract instead)

    Preheat oven to 350°F.

  2. 2

    In medium bowl, whisk together the flour, salt, sugar, and baking powder.

  3. 3

    In small bowl, whisk together the milk/water and melted butter/margarine or oil. Pour over the flour mixture. Mix with a fork until dough is evenly moistened.

    Place dough into pie pan and pat across the bottom of pan and up sides using a flat-bottomed cup.

  5. 5

    Bake for 15 minutes. Remove and set aside to cool.

  6. 6

    For the pie filling: Add 1 cup berries to a small saucepan. Mash using a potato masher to a chunky sauce.

  7. 7

    Whisk in sugar/sweetener, salt, cornstarch, vanilla extract, lemon juice, and cinnamon/almond extract.

  8. 8

    Bring to a simmer over medium heat and cook, stirring occasionally, until sugar/sweetener dissolves and mixture thickens (approximately 3-5 minutes). Remove from heat and cool completely.

    Once cooled, mix in remaining cup (or 1 1/4 cup) of berries until well combined. Pour mixture into pie crust.

    Refrigerate for at least 2 hours before serving to allow filling to set.
