Found myself with an abundance of fresh blueberries (thanks to the boyfriend and Costco) and decided to try making pie for the first time! Came up with this recipe which is super easy and yummy!

Found myself with an abundance of fresh blueberries (thanks to the boyfriend and Costco) and decided to try making pie for the first time! Came up with this recipe which is super easy and yummy!

Preheat oven to 350°F.

In medium bowl, whisk together the flour, salt, sugar, and baking powder.

In small bowl, whisk together the milk/water and melted butter/margarine or oil. Pour over the flour mixture. Mix with a fork until dough is evenly moistened.

Place dough into pie pan and pat across the bottom of pan and up sides using a flat-bottomed cup.

Bake for 15 minutes. Remove and set aside to cool.

For the pie filling: Add 1 cup berries to a small saucepan. Mash using a potato masher to a chunky sauce.

Whisk in sugar/sweetener, salt, cornstarch, vanilla extract, lemon juice, and cinnamon/almond extract.

Bring to a simmer over medium heat and cook, stirring occasionally, until sugar/sweetener dissolves and mixture thickens (approximately 3-5 minutes). Remove from heat and cool completely.

Once cooled, mix in remaining cup (or 1 1/4 cup) of berries until well combined. Pour mixture into pie crust.

Refrigerate for at least 2 hours before serving to allow filling to set.
