Ingredients

  • 1 largeVidalia or sweet onion, peeled and sliced into 1/2 inch rings
  • 1 pintscherry tomatoes
  • 1 mediumto large zucchini (about 1/2 pound), trimmed and cut into 1/2 inch slices
  • 1 mediumto large yellow squash (about 1/2 pound), trimmed and cut into 1/2 inch slices
  • 2to 3 tablespoons extra virgin olive oil
  • 1/4to 1/2 teaspoon salt, to taste
  • 1/4to 1/2 teaspoon ground pepper, to taste
  • 1/2 cupfreshly shredded parmesan cheese

Steps

  1. 1

    Combine all the vegetables in a large bowl.

  2. 2

    Add the olive oil, salt and pepper and toss to coat.

  3. 3

    Place the vegetables in a grilling basket.

  4. 4

    Grill for 20 to 30 minutes (turn after 10 minutes or so) or until the vegetables are cooked to the desired tenderness.

  5. 5

    Place on a serving platter.

  6. 6

    Sprinkle with cheese.

  7. 7

    Serve.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
