We love Mexican fare in my house. I came up with this recipe entirely on my own and it gets better every time I make it. The packaged cheese dip really provides a great restaurant-like flavor and the seasoned meat is even better! I make my beef ones with green sauce and the cheese ones with red sauce, but do yours however you want! I just decided to post this since it’s Cinco de Mayo. They are yummy and a great way to honor the day!

I love mexican food but sometime its to much in one enchilada. So i made a all beef and cheese and it was Great.!!!!!

These enchiladas are a delicious, at-home, perfectly spiced Mexican meal. It’s a quick & easy meal that’s melt-in-your-mouth cheesy and saucy. It makes for a delightful, cozy dinner for any occasion.

I always double my recipe because everyone I make these for absolutely loves them! (NOTE: Using flour tortillas will make the enchiladas soggy!! They'll still taste good, but very soggy texture! That's why it calls for corn tortillas instead.)
