Ingredients

  • 6 cupSweet potatoes (peeled and cubed)
  • 1/4 cupMilk
  • 1/4 cupMaple syrup
  • 1 tspSalt
  • 1Egg (lightly beaten)
  • Streusel Topping
  • 1/4 cupBrown rice flour
  • 1 cupBrown sugar
  • 1 tspCinnamon
  • 2 tbspButter

Steps

  1. 1

    Preheat oven to 375°F

  2. 2

    Grease an 11 x 7 in. pan

  3. 3

    Place potatoes in a pot with just enough water to cover

  4. 4

    Bring to a boil, then let cook for 15 min.

  5. 5

    Drain potatoes and mash

  6. 6

    Add milk, syrup, salt and egg

  7. 7

    Blend, then spoon into pan and set aside

  8. 8

    Combine flour, sugar and cinnamon

  9. 9

    Add butter and mix until crumbly

  10. 10

    Sprinkle evenly over potato mixture

  11. 11

    Cover with foil and bake for 15 min.

  12. 12

    Uncover and bake for an additional 25 min.
