Ingredients

  • 1 boxgarlic couscous, prepared
  • 2 eachcolored peppers
  • 1 smallRed onion, chopped
  • 4Green onions, chopped
  • 1/2cucumber, diced
  • 1/2 cupfeta cheese
  • 3/4 cupkalamata olives
  • 1 cupGreek dressing
  • 1 pintscherry tomatoes, halved

Steps

  1. 1

    Roast peppers at 400°F for 20 minutes or until burnt appearance. Allow to cool while chopping other veggies.

    Chop veggies. For cucumbers, peel 4 lengths down the width of the cucumber before chopping.

    Combine all ingredients. Chill in refrigerator.
