Ingredients

  1. 12 sliceyour favorite bread, I used bakery cheese bread
  2. 16 ozcheese, I used pepper jack and cheddar
  3. 2 tbspmayonnaise
  4. 16thin slices of bacon, cooked crisp
  5. 4 sliceof a large round ripe tomato
  6. 8leafs of lettece
  7. 1/2 tspblack pepper and salt to taste
  8. 2 tbspbutter, more if needed for cooking

    Each sandwich will have 3 slices of bread.

    To make 1 sandwich place 4 ounces of cheese on one slice of bread, top with second slice of bread. This is your grilled cheese, cook this part of the sandwhich in a buttered skillet turning once until golden and cheese melts. Meanwhile toast third slice of bread lightly in the tosster.Remove grilled cheese from pan, Spread mayonnaise on one side of toast and top of grilled cheese. On grilled cheese top add 4 slices bacon, 1tomato slice salt and pepper and then lettece, top with toast mayonnaise side on lettece. Press lightly and cut in half, and serve.

    Make all four sanwiches the same way, serve while grilled cheese is still hot.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
