Ingredients

  1. for katoris:
  2. 2&1/2 cups: plain flour
  3. 1/2 tsp: baking powder
  4. 1/2 tsp:ajwain
  5. 1 tsp:salt
  6. 1 cup:water
  7. :oil for frying
  8. stuffing for 10 katoris
  9. 1.5 cups Boiled and Fried potatoes
  10. 1.5 cups Chopped tomatoes without pulp
  11. 1.5 cups Boiled Garbanzo beans (Safed chole)
  12. 1.5 cups Chopped Onions
  13. 3 tablespoon Sprouts
  14. 2 cupsBeaten curd/yogurt
  15. 1 cupGreen Chutney
  16. 1 teaspoon Red chilli powder (to sprinkle on top of chaat
  17. 2 teaspoonChaat Masala (to sprinkle on top of chaat)
  18. 1/2 cupSev

Steps

  1. 1

    Knead dough with, flour, salt, ajwain, water.

  2. 2

    Make small balls and roll in small round shape

  3. 3

    Grease the bowl and wrap the dough around it, prick the bottom it stops it from puffing.

    Heat oil.

  5. 5

    In the heated oil drop the katori wrapped with dough and fry it.

  6. 6

    Oil will start filling up in the katori, BE CAREFUL. Using a tong carefully remove the dough from the katori and after draining all the oil pull the katori out. DO NOT TOUCH, it's still hot. Keep frying the dough shaped katori in oil till golden and crisp on medium to high flame.

    Once brown remove from oil and drain it on a paper towel.

    Assembling katoris

    Chop boiled potatoes and fry them till golden brown. Instead of frying you can bake the potatoes.

    Remove pulp from tomatoes and chop them.

  11. 11

    Assemble all the ingredients and let's begin filling up these goodies...

    Place katori on a clean plate...

  13. 13

    Pour 1 tablespoon green chutney at the base of the katori...

  14. 14

    Add 1 tablespoon tamarind chutney...

  15. 15

    Add 1 tablespoon curd...

  16. 16

    Add 1 tablespoon boiled chickpeas, sprinkle a pinch of salt....

  17. 17

    Add 1 tablespoon fried potatoes....

  18. 18

    Add 1 tablespoon chopped onions....

  19. 19

    Add 1 tablespoon chopped tomatoes, sprinkle a pinch of salt....

  20. 20

    Add 1 tablespoon curd....

  21. 21

    Add 1 teaspoon green chutney, tamarind chutney, pepper and chat masala. Since we have added salt earlier so you can pass on the salt and chaat masala and chutneys will take care of the salt content.

    Top with sev and chopped cilantro and serve!!
