Ingredients

  1. 1/2 cupground coffee
  2. 1/2 cupcoarse salt (kosher or sea)
  3. 1/4 cuppaprika (hot)
  4. 1/2 cup(packed) dark brown sugar
  5. 2 tbspground cardamom
  6. 2 tbspground ginger
  7. 1/3 cupchopped fresh garlic
  8. 1/2 cupvegetable oil, or as needed

Steps

  1. 1

    Combine all the ingredients, except the oil, in a bowl or food processor and stir or process to mix.

  2. 2

    Stir in enough oil to make a thick paste.

  3. 3

    The rub should be used the day it's made.

  4. 4

    Cover and refrigerate until using.

  5. 5

    *Smear the rub on the brisket on all sides and place in a roasting pan. Marinate, covered, in the refrigerator, for at least 4 hours, or as long as overnight.*

  6. 6

    **This makes about 2 cups, enough for a 5 to 7 pound brisket.**

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
