The cushion meat is a boneless cut from the main muscle of the picnic shoulder. Its lean, cheap, and flavorful. I usually cook it using liquid, slow roasted, or for pulled pork. I used liquid method here.

Ingredients

8 servings
  1. 1 cupstrong coffee
  2. 3 lbpork cushion meat
  3. 2 mediumonions
  4. 2/3 tspsalt
  5. 1/2 tspground sage
  6. 1/2 tspgranulated garlic powder
  7. 1 tbspground cumin
  8. 1/4 cuphoney
  9. 1/4 cupmolasses
  10. 1/4 tsponion powder

Cooking Instructions

    Preheat oven 425° Fahrenheit.

    cut hash marks into top side where the little bit of fat is. Add spices, drizzle the honey, and drizzle the molasses over the top of meat. Cut onions into quarters. Lay around the pork.

    Add coffee on the side not on top of meat

  4. 4

    Bake covered in oven 45 minutes. Uncover, and bake 15 more minutes. Then slice put on stove top and simmer the sliced meat in the juices for 3-4 minutes each side.
