Toast the pine nuts in a pan on medium to turn golden brown. Using a blender or food processor, add the basil, garlic, pine nuts and parmesan cheese and pulse until finely chopped. With blender running, gradually add the olive oil in a stream until the pesto comes together. Season with salt and pepper. You have to scrape the pesto down from the sides often. Easy and delicious!
