Lentil & potato pressure cooker vegetable soup

Twas the night before payday, and all through the kitchen, not a meal was in sight, not even leftovers.

So I pulled this together with odds and ends. It was way better than I expected. You could probably sub in any veggies you have laying around, or any starch (rice or barley or pasta) instead of lentils and potatoes. That's what's so awesome about soup.

Note that I only had about a quarter cup of lentils to use and most of those sunk to the bottom. I'd have used a full cup if I had it, your soup will have more lentils than the picture shows.

Ingredients

30-45 min
6-8 bowls
  1. 8 cupsbroth
  2. 1 cuplentils (or barley or rice would probably work too.)
  3. 3small potatoes, diced
  4. 2-3 clovesgarlic
  5. 1-1/2cup, approx, Celery, sliced,
  6. 2onions, diced
  7. 1tomato, diced
  8. ~1-1/2 cups green beans(or whatever other leftover veg you have)
  9. 1dried habanero
  10. ~1 tbsp Butter
  11. ~1 tsp Olive oil
  12. 1 tbspPaprika, at least
  13. to tasteOregano
  14. to tasteBasil
  15. To tastepepper
  16. Dashthyme
  17. 2bay leafs
  18. DashSherry if you've got it

Steps

30-45 min
  1. 1

    Set electric pressure cooker (Instant pot or other) to brown

  2. 2

    Melt butter and brown onions in it until they're good and caramelized on the outside.

  3. 3

    While onions are browning chop up any veggies that aren't prepared yet and the habanero pepper.

  4. 4

    Add all other ingredients to onions, including broth. Stir

  5. 5

    Set pressure cooker to high pressure for 18 minutes

  6. 6

    When time is up, fast release pressure and serve.

  7. 7
