Inastant jalebi

Take a big bowl add all the ingredients of jalebi batter except water and whisk so that all the ingredients get incorporated with each other.

Now add in water little at a time and mix with a whisk.you can add water to make thick jalebi batter(jalebi batter should have bonda lik consistency)whisk nicely 3-4 minutes to incorporate air inside the jalebi batter.

Make a smooth and thick jalebi batter, make sure there should not be any lumps. keep this batter for 10 minutes meanwhile make sugar syrup. for sugar syrup-take a big base kadai add in sugar and water.cook this sugar and water mixture to make 1 string consistency suga syrup.inbetween add kesar,cardamom powder. when sugar syrup start bubbling squeeze in lemon juice,roasted melon seeds and switch of the flame

Heat oil on a high flame in a kadai for deep frying jalebis.Pour ready jalebi batter in a Polythene bag or piping bag with a tiny hole at the bottom and start making swirl in clockwise direction.fry in medium to low flame until jalebis becomes crisp and light golden in colour.

Quickly transfer these deep fried jalebis in sugar syrup for 5minutes

Serve these hot yummi jalebis in a serving plate and enjoy.
