Ingredients

4 servings
  • 8 ozcavatappi pasta
  • 2 tbspolive oil
  • 2 clovegarlic, minced
  • 2 tbspdry white wine
  • 1/4 cupprepared pesto
  • 1zest and juice of 1 medium lemon
  • 1/4 cupfreshly chopped parsley
  • 1/2 cupheavy whipping cream
  • 1 lblarge raw shrimp, peeled and deveined
  • 1/3 cupfreshly grated Parmesan cheese

Steps

  1. 1

    Cook pasta in a large pot of boiling water according to package directions.

  2. 2

    Meanwhile in a large skillet, heat olive oil.

  3. 3

    Add garlic and saute 2 to 3 minutes.

  4. 4

    Add wine and let garlic simmer in wine over medium low heat for a few minutes.

  5. 5

    When pasta is almost al dente, turn heat under skillet to high and add shrimp.

  6. 6

    Sauté shrimp until just pink.

  7. 7

    Add pesto, lemon zest and juice, and cream.

  8. 8

    Simmer a few minutes to reduce slightly, then drain pasta and immediately add it to the skillet.

  9. 9

    Pour pasta and shrimp into a serving bowl, then stir in parsley and Parmesan.

  10. 10

    Serve immediately.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
