Bacon Chicken Carbonara

Ingredients

  1. 1 lbangel hair pasta or spaghetti
  2. 4 eachEggs
  3. 1/2 cupParmesan cheese
  4. 1 lbbacon cut into pieces
  5. 2 cupcooked chicken chopped
  6. 1Salt and pepper
  7. 4Green onions sliced

Cooking Instructions

    Boil pasta according to package direction in heavily salted water. In the meantime, crisp bacon in another pot and drain on paper towels. Drain bacon grease reserving a tablespoon or so in the pot.

    Crack 4 eggs in a bowl with Parmesan cheese salt and pepper and whisk to combine.

    When pasta is done drain and reserve 1 cup of pasta water. Add pasta to the pot and stir in the egg mixture vigorously for 3-4 minutes. Add bacon, chicken, and green onions and combine. Add the hot pasta water as needed to cream the mixture.

    Add extra parm and enjoy! I serve it with crusty garlic bread and a fresh green salad.

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
