Ingredients

4 servings
  • 3 tbspbutter, melted
  • 3 cupcorn chex (or chex of your choice)
  • 1 lbground beef
  • 1 tspchili powder
  • 3/4 tspseasoned salt
  • 1/4 tspgarlic powder
  • 1 dashpepper
  • 1 dashonion powder
  • 8 ozTomato sauce
  • 1/2 cupTaco sauce
  • 15 ozcan corn, drained
  • 12 sliceAmerican cheese

  1. 1

    Combine melted butter & chex. Toss to coat well. Put 2 cups in bottom of shallow baking dish. Crush remaining chex. Set aside.

  2. 2

    In skillet, brown beef & drain. Add seasonings. Mix in tomato & taco sauces.

  3. 3

    Layer half the corn, meat mixture, & cheese over chex in baking dish. Repeat with remaining corn, meat, & cheese. Sprinkle reserved chex crumbs over top.

  4. 4

    Bake in 325°F oven for 35 minutes or until edges are bubbly.

This is one of my dad’s favorites! My grandmother found this recipe while reading a magazine in the doctors office, sometime during his childhood. My mom makes it every year for his birthday. We thought we were the only ones who knew what Mexicali pie was! We sent her this recipe and she sent us a picture of the original recipe, taken from the magazine at the doctors office. Thanks for sharing :)
