I love the flavours found in Moroccan foods and the best thing about a ras-el-hanout mix is that you can add in or leave out whatever you want to! The first few ingredients make up the base then it's up to you what else you add in to expand the flavour. Some mixes can use up to 100 different spices, some use 10. It's completely down to your taste and every household will have their own version! This is my favourite version of the spice mix

Ingredients

  • 1 tbspground coriander
  • 1 tbspground ginger
  • 2 tspground black pepper
  • 2 tspground cinnamon
  • 2 tsppaprika
  • 2 tspground allspice
  • 2 tspground cumin
  • 2 tspchilli powder
  • 2 tspground turmeric
  • 1 1/2 tspground nutmeg
  • 1 1/2 tspground green cardamom
  • 1 1/2 tspground mace
  • 1 tsplavender buds, ground (around 1/2 teaspoon ground)
  • 3/4 tspground fennel seeds
  • 3/4 tspground star anise
  • 1/2 tspground fenugreek
  • 1/2 tspground cloves
  • 1/2 tspcayenne pepper
  • 2dried bay leaves, ground (around 1/8th teaspoon ground)

  1. 1

    Combine all ingredients in a bowl and mix together well. I use my coffee grinder to grind the seeds, bay leaves etc

    Store the spice mix in an airtight container, an empty cinnamon jar is ideal
