  1. 1 each6-8" cucumber, (peeled or not)
  2. 2 eachRoma (Plum) tomatoes
  3. 1 each6-8" green onion
  4. 1/4 cupapple cider vinegar
  5. salt and pepper

  1. 1

    Slice cucumber and tomatoes 1/4" thick. Sprinkle with vinegar, salt and pepper. Gently toss together . Allow to marinate about 15 minutes minimum. Serve as a small cool side.
