
Gluten free mustard-crusted pork tenderloin

Set oven to 400°F. Spray baking sheet with cooking spray.

Sprinkle tenderloin with salt and pepper. Then using a spatula, spread mustard all over tenderloin.

In a shallow bowl lightly mix almond meal with garlic powder and rosemary. Dredge the tenderloin in the mixture to coat.

Place tenderloin on the baking sheet and spray lightly with cooking oil. Roast uncovered for approx 30 min. Thermometer should read 155degreesF. Tenderloin will cook slightly after removing from oven.

Let rest for 5 minutes. Slice and serve!
