Ingredients

  1. 1Raita
  2. 1 cupplain yougurt
  3. 1/4 tspsalt
  4. 1/4 tspground cumin
  5. 1/2 cuppineapple tidbits in juice drained or diced mango
  6. 1Wraps
  7. 2 tspcanola oil
  8. 1 smallonion chopped
  9. 2 clovegarlic minced
  10. 1/4 tspsalt
  11. 1/2 tspcurry powder
  12. 1/4 tspground cumin
  13. 1/4 tspground coriander
  14. 1/4 tspcayenne pepper
  15. 1 tbspfresh gingerroot minced
  16. 1 can15 oz chickpeas rinsed and drained
  17. 1 cupcanned crushed tomatoes
  18. 3 cupfresh baby spinach
  19. 48 inch whole wheat tortillas warmed

  1. 1

    In a small bowl mix the first 4 ingredients for raita and set aside

  2. 2

    for wraps coat a nonstick skillet with canola oil and heat over medium high heat add onion and cook till tinder.stir in ginger, garlic and all seasonings and cook and stir for 1 minute

  3. 3

    stir in chickpeas and tomatoes and bring to a boil then reduce heat and simmer uncovered for 5 to 8 minutes or till slightly thickend stirring occasionally

  4. 4

    place spinach and chickpea mixture near the center of each tortilla and top with some raita. Roll up tightly and enjoy
