An easy, tasty, and nutritious breakfast for a wonderful morning!

Melt the butter over low heat and let it cool slightly.

In a large bowl, mix the flour, baking powder, salt, and sugar.

In another medium bowl, whisk together the milk, eggs, and melted butter. Add this mixture to the flour mixture and whisk until just combined. Cover and let the batter rest for about 30 minutes.

Grease a nonstick skillet (or electric griddle) with butter or olive oil and heat over medium to medium-high heat.

Using a small cup, pour the pancake batter into the skillet. After 40-45 seconds, bubbles will start to form on the surface. Flip with a spatula and cook for another 45 seconds. The pancakes should be a nice golden brown. Note: The first pancake often stays pale (this happens to me too). Adjust the heat or cooking time as needed. Don’t get discouraged—the next ones will turn out perfect!

Serve with butter, maple syrup, honey, banana, strawberries, blueberries, walnuts, or any toppings you like. You can also make them savory by adding cheese and ham.
