Pumpkin sabzi (khatti mithi)

Cut the pumpkin into 2-3 cm pieces.Ginger and chilli too.

Heat the oil,add asafoetida/hing, pachforan. When the seeds begin to splutter, add ginger and green chilli.Saute till lightly colored, add pumpkin, stir-fry over high heat until they look glossy.Add salt, turmeric, garam masala, coriander powder, chilli powder and sugar and mix well.Lower the flame and let simmer covered, until cooked through, stirring 3-4 times.Add the amchoor/imli paste, cook further for 2-3 minutes.

Garnish it with coriander leaves.Pumpkin sabzi is ready.
