Ingredients

  1. 1tomatillo Salsa (see recipe on my profile)
  2. 4 ozcream cheese, room temperature, whisked smooth
  3. 8 ozgrated cheese (I use Cotija from the Mexican Store)
  4. 1zest of 1 lime
  5. 2to 3 teaspoons green jalapeño sauce (I use poblano)
  6. 1salt to taste
  7. 1pepper to taste
  8. 1/4 cupcilantro leaves
  9. 1/4 cupchopped toasted almonds
  10. 2green onions, cleaned, cut into very thin rounds, rinsed and dried

Steps

  1. 1

    Make tomatillo salsa.

  2. 2

    Push through a strainer to remove all liquid, and measure 3/4 cup of the strained salsa.

  3. 3

    In a bowl, mix the 3/4 cup salsa, cream cheese, grated cheese, lime zest, green onions, and jalapeño sauce.

    Season to taste with salt and pepper.

  5. 5

    Place in refrigerator to chill for 20 minutes.

  6. 6

    In a separate bowl, mix cilantro and almonds together.

  7. 7

    Remove cheers from refrigerator and form it into a large ball.

  8. 8

    Coat the ball evenly with the cilantro/almond mix.

  9. 9

    Wrap in plastic wrap and chill until serving.

  10. 10

    Serve with your favorite crackers, crudites, etc.

  11. 11

    *This recipe makes 1 (6 inch) ball.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
