Ingredients

  1. 3 cupsweet potatoes (peeled, cubed and boiled until tender)
  2. 1 tbspchopped chive
  3. 1 clovegarlic --grated
  4. 1 tspchopped onion
  5. 1egg
  6. 1 tspbaking powder
  7. 1/4 tsporange zest
  8. 1/4 cupflour
  9. 1 tbspsoftened butter
  10. 1TOPPING
  11. 1 cupgrated mozzarella cheese
  12. 1/3 cupbacon (I used turkey )

Cooking Instructions

    Gather ingredients

    In a bowl add sweet potato , garlic, onion, butter and chive --mash until smooth--add salt and blackpepper to taste.

    Add the flour, baking powder, zest and egg --mix to combine

  4. 4

    On a parchment lined cookie sheet gently press the sweet potato mixture into a circle -- as shown in step pic ( you can also use a greased pizza pan )

    Sprinkle half of the cheese- top with the bacon -- sprinkle the other half of the cheese over.

    Bake in a preheated 450°F oven for 18 - 20 minutes

    Cool -- cut into wedges -- you can serve as is or topped with ketchup or a dollop of sour cream
