Ingredients

  1. 3 lbyellow summer squash, finely chopped
  2. 3 lbzucchini, finely chopped
  3. 6 largeonions, finely chopped
  4. 3 mediumgreen peppers, finely chopped
  5. 3 mediumsweet red peppers, finely chopped
  6. 1/4 cupsalt
  7. 2 cupsugar
  8. 2 cuppacked brown sugar
  9. 2 cupwhite vinegar
  10. 4 tspcelery seed
  11. 1 tspground tumeric
  12. 1 tspground mustard

Steps

  1. 1

    In a large bowl, combine the first 6 ingredients.

  2. 2

    Cover and refrigerate overnight.

  3. 3

    Drain vegetable mixture.

  4. 4

    Rinse in cold water and drain again.

  5. 5

    Place vegetables in a Dutch oven.

  6. 6

    Add both sugars, vinegar, celery seed, tumeric, and mustard.

  7. 7

    Bring to a boil.

  8. 8

    Reduce heat.

  9. 9

    Simmer, uncovered, for 15 to 20 minutes or until liquid is clear.

  10. 10

    Remove from the heat.

  11. 11

    Cool.

  12. 12

    Spoon into containers.

  13. 13

    Cover and refrigerate for up to 3 weeks.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
