Beef Scotch Fillet & Rocket Salad

Ingredients

  1. 2Beef scotch fillets, approx 450g
  2. 1Sprinkle of garlic salt
  3. 1Sprinkle of smoked paprika
  4. 3/4 cupSemi sundried tomatoes, sliced
  5. 1Olive oil for cooking
  6. 60 gramsBaby rocket
  7. 1Handful of baby beetroot leaves
  8. 1Handful of English spinach leaves
  9. 1/2Red onion, finely sliced
  10. 3 stickSpring onion, sliced
  11. 1/3 cupMayonnaise
  12. 1/3 cupButtermilk
  13. 2 clovegarlic, minced
  14. 1 tbspWhole grain mustard
  15. 1Black pepper to serve

Cooking Instructions

    Preheat oven to 200*C.

    Chop spuds in half, boil in a pot until softened but still holding together well. Oil spuds, salt spuds and bake until browned.

    Meanwhile, season steaks with garlic salt and paprika. Fry in hot pan (both sides) until around medium (still pink inside) and set aside to rest.

    Also - in a glass jar add Mayo, butter milk, garlic and mustard. Shake well.

    Throw salad leaves, semi sundries tomatoes and onions in a large salad bowl.

  6. 6

    Slice steaks and when spuds have cooled to warm throw both into salad. Top with dressing and serve with some cracked black pepper.
    Serves 3 or 4 or many sides.
