Ingredients

6 servings
  • 1 cupdry beans, soak overnite. ( i used pinto beans)
  • 2 lbground beef
  • 1 mediumonion, chopped
  • 1or 2 chili peppers, seeded and chopped
  • 1 clovegarlic, peeled and minced
  • 1 can28 ounces, crushed tomatoes
  • 2 tbspchili powder
  • 2 tspgarlic powder
  • 1 tspcumin
  • 1/2 tspcayenne pepper
  • 1/4 cupcornmeal, for thickening,

Steps

  1. 1

    drain soaked beans.

  2. 2

    place in 6 qt pan and cover with water, simmer until tender, about an hour

  3. 3

    crumble meat in skillet with onion, pepper, and garlic. brown evenly.

  4. 4

    add meat, tomatoes, and seasonings to beans

  5. 5

    simmer another 20 minutes

  6. 6

    if needed, add 1/4 cup cornmeal to thicken, simmer another 15 minutes

  7. 7

    serve and enjoy

  8. 8

    goes great with fried cornbread.
