Mind blowing black bean corn salsa

I love this I can't stay out of it !! Note I recently just made this again and had a craving for tacos but had no taco meat so I warmed up some of the black bean corn salsa and put it in to hard taco shells and topped it with sour cream, shredded White cheddar cheese and some shredded lettuce. 😁

Ingredients

  1. 1 can (15 oz)black beans rinsed and drained
  2. 1 (14.4 oz)bag frozen baby gold & white corn
  3. 1red bell pepper chopped small
  4. 1/2red onion chopped small
  5. 2 clovesgarlic minced
  6. 2 Tbsp.Fresh minced cilantro leaves or use dried minced
  7. 1 tsp.garlic powder
  8. 1 1/2 Tbspschili powder I like mexene
  9. 1 tsp.course sea salt or kosher
  10. 1/2 tsp.Ground black pepper
  11. 1 1/2 tsp.ground cumin
  12. 1/2 tsp.cayenne pepper
  13. 1 tsp.oregano leaves
  14. 3 Tbsp.Extra virgin olive or grapeseed oil
  15. 2limes juiced about 1/4 cup
  16. 1 bagtortilla chips

Cooking Instructions

  1. 1

    (Optional) Bloom seasonings in oil in a hot skillet for a few minutes

    In a medium sized bowl throughly mix everything together. Cover and refrigerate overnight. Stir and enjoy with tortilla chips
