  1. 1English Cucumber
  2. 1Roasted Red Sweet Pepper
  3. 1 tspBrown Mustard
  4. 1/2 tspHoney
  5. 1Splash of Red Wine Vinegar
  6. 3 tbspOlive Oil

Steps

  1. 1

    Wash cucumber. Using vegetable peeler, slice cucumber into ribbons.

  2. 2

    Chop roasted red pepper into bite sized pieces.

  3. 3

    In a small bowl combine mustard, honey and vinegar. Slowly whisk in olive oil.

  4. 4

    Mix veggies with dressing. Season with salt and pepper. Serve.

This was good but i don't think it needed that much olive oil. Will make with less next time.
