Oil-Free Miso Bread with Cake Flour Oil-Free Miso Bread with Cake Flour
A user taught me that you can make the best bread using cake flour by not including too many ingredients. Since the gluten content is also low if you add too much to the dough it just weighs it down. So when I thought about cutting down on the extra ingredients I figured I could use whatever I had at home. Checking the fridge I discovered miso, and figured that fermented foods are good for you. That's how this bread came to be.The moisture of the miso varies, so add it carefully while keeping that in mind. This is my personal preference, but since I like the bottom of the bread to have a nice baked color and be crispy, I bake them with that intent. I also like the aroma of the miso. Rice Flour Bread in a Pound Cake Mold Rice Flour Bread in a Pound Cake Mold
I made this bread for my daughter who has flour and egg allergies. It's best to use rice flour with a thickening agent and trehalose in it. If using other flours, it might not be as fine and won't be able to absorb the moisture well enough, so they might not be good to use. Recipe by Chihimari cookpad.japan -

Naan bread is really the perfect accompaniment to Indian curry. This is not like making risen bread, so you don't have to strictly adhere to the rising and resting times. Just knead, form and cook! That's it!The dough is only rested so that it's easier to stretch out.You can do steps 1 through 3 in a bread machine. Recipe by Rizzy cookpad.japan -

Milky Loaf Bread Baked in a Pound Cake Mold Milky Loaf Bread Baked in a Pound Cake Mold
I ran out of bread for the next morning! And to make things worse, I have no time!So I wondered if I could just shorten the time it takes to make my usual bread and came up with this recipe.Baking the bread from a cold start (baking from a low temperature) helps the yeast to perform at it's maximum strength and allows the dough to rise very well. The times will change depending on the temperature, dough temperature, etc. so keep your eye on it as it rises. Recipe by chi-chan cookpad.japan -

Fluffy Steamed Meat Buns, Handmade Dough Just use Cake Flour Fluffy Steamed Meat Buns, Handmade Dough Just use Cake Flour
I love fluffy steamed buns. After a lot of research , and finally completing this recipe, I decided to post it here. Now it has been over 10 years since I first introduced this recipe. It is scary how fast time flies .Be very careful not to let the surface of the dough dry out while it rises. Use a spray bottle to mist the dough, or a damp tea towel to keep the surface moist.Since the dough is slightly sweet, you can fill the buns with anko or another sweet filling. Try many different combinations. Recipe by Shunashuna cookpad.japan -
