Potatoes, Mushrooms & Mix Veggies

Cooking Instructions

Minced the garlic cloves.

Soak the dried mushrooms in the water until it soften thoroughly. After that, rins it with water. Then, slice it thinly (not too thin).

Diced the potatoes and cut the carrot into smaller rectangular shape. Then, boil both of it for a few minutes (make sure it is not overly boiled).

Cut the okra/lady's fingers into three to four smaller parts. Then, boil it for a few minutes only (make sure it is not overly boiled).

Put the olive oil in the pan. Wait until it is ready. After that, put in the garlic and stir it until it turn light brown. Then, add in a small cup of water (not too much).

Stir it and wait until it boils. Then, add in the salt to taste or as much as you prefer (other things for its taste also can be added)

Lastly, put in all the mushrooms, potatoes, carrot and okra/lady's fingers into it and stir until it have been perfectly cooked (make sure not overly cooked)

Baked potato salad & mushrooms Baked potato salad & mushrooms
I hope relaxing and fun! We didn’t do much this weekend except take long walks with Charlie. Sunday was a lovely sunny day so on the way back from our walk I asked my hubbie what he wanted for lunch. He said sandwiches and potato salad, I knew which potato salad he meant and this one was going to take time to prepare. 🙂You are probably thinking by now, that seems to be a pretty simple lunch to make. Well not exactly because the potatoes are baked, not boiled so this is why more time is needed in the kitchen. It took me about an 1 1/2 to put together the potato salad. Oh!! wait one more thing there is also a delicious Mustard Sauce that is generously drizzled over the mushrooms and onions before baking, save 1/2 to drizzle over the potatoes. By the time I was done, it was already 3 pm so this was a very late lunch. Dinner was definitely out of the question. 🙂 Foodzesty -
