Ingredients

  1. 2 1/2 cuprhubarb stalks, cut into 1 inche pieces
  2. 1 1/2 cupthinly sliced fresh dtrawberrys
  3. 1 1/4 cupgranulated sugar
  4. 1 1/2 cupheavy whipping cream
  5. 1/4 cupconfectioners sugar
  6. 1 tspvanilla extract
  7. 1 tbspchocolate sprinkles

    Combine rhubarb and 1 cup sugar in saucepan, stir and let sit to give off its liquid 20 minutes. Add strawberrys to a bowl and add 1/4 cup sugar and also let sit 20 minutes. When the 20 minutes is done add any juice from strawberrys to rhubarb.Keep strawberry slices in bowl.Heat rhubarb over medium heat until very soft about 10 minutes, remove from heat and add strawberrys mix well. Chill until cold about 2 hours.

    When cold beat cream until thickened add confectioners sugar and vanilla and beat until stiff peaks form. Add rhubarb strawberry, ixture very gently with a spoon to make a streaky look do not over blend. Spoon into glass seving dishes, garnish with chocolate sprinkles.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
