I get so bored with the same old green salad, and I live in a hot country for at least 7 months of the year. So cold food is the name of the game for me. I tend to experiment quite a bit and this one turned out really well. Of course you can stretch it to go further by adding more leaves and tomatoes but I'd keep the quantity of the dressing the same.

  • 1/2 packagesBaby spinach leaves
  • Basil leaves
  • (About 1/2 cup) mint leaves, depending on your taste
  • Rocket
  • 8Baby tomatoes ( leave them whole)
  • 8 largeStrawberries cut in half (16 pieces)
  • 1 1/2 cupBlueberries
  • 1 smallYellow pepper cut julienne style
  • 1 cupWhite seedless grapes
  • 1 1/2 cupBlack seedless grapes
  • 1/2 cupChopped pecan nuts
  • Dressing
  • 1/2 cupOlive oil
  • 1/2 cupSugar (white dissolves easier than brown in my experience)
  • 1/4 cupWhite wine vinegar
  • 1Splash of rice vinegar
  • 1 tspPaprika
  • 2 tspWorcestershire sauce
  • 3 tbspSunflower seeds
  • 1 tbspSesame seeds

  1. 1

    Mix the dressing well so that the sugar dissolves, cover and place in refrigerator for at least an hour for flavours to blend

  2. 2

    Wash and toss together all the salad ingredients. Add the dressing about 1/2 an hour before serving. Toss well. Enjoy
