Great healthy salad. Red beets have all the necessary antioxidants and betaine which are very good for your immune system. The combination with chickpeas tastes great! Add feta or any other type of cheese as an extra :-)

  • 3 mediumred beets
  • 1red capsicum
  • 1 tbspdill
  • 1juice of one lime
  • 1salt and pepper to taste
  • 1 tbspwhite balsamic vinegar
  • 2 tbspolive oil

    Dice beets and capsicum

  2. 2

    Drain chickpeas and mix with veggies

  3. 3

    Add oil, vinegar, lime juice, dill and salt and pepper

    Serve with feta cheese if you like :-)
