Ingredients

  • 6chicken breasts
  • 3 tbspDijon mustard
  • 3 tbspnatural Greek yoghurt
  • 3 tbsphoney
  • 1 tsppaprika
  • 6basil leaves
  • 1olive oil (I use the oil from my "preserved basil" recipe
  • 1salt & pepper

Steps

  1. 1

    Pre-heat oven to 180°C

  2. 2

    Mix mustard, honey, Greek yoghurt and paprika together

    Lightly oil baking dish using basil oil and lay chicken breasts in it

  4. 4

    Pour 1/2 mixture over chicken and place a basil leaf (see preserved basil recipe) on each one

    Place in oven and cook for 30 mins

  6. 6

    Pour remaining sauce mix over chicken and return to oven for a further 10 - 15 minutes until cooked through

  7. 7

    Serve with rice and green veggies
