Ingredients

  • 1large chicken, cut into four pieces and washed
  • 2.2 pounds(about 1 kilogram) couscous or more, depending on the number of people
  • 2carrots
  • 2large tomatoes
  • 2onions
  • 1zucchini
  • 1eggplant
  • 1turnip
  • 1cabbage
  • 1 cupchickpeas
  • 1potato
  • 1 teaspoonblack pepper
  • 1 teaspoonturmeric
  • 1 teaspoonginger
  • 1 teaspoonsalt
  • 1hot chili pepper
  • 1 bunchcilantro and parsley
  • Oil and a dash of olive oil

Steps

    Wash and peel all the vegetables, then cut them into large pieces.

    Take the dry couscous and sprinkle it with water until it absorbs and the grains become moist, then set it aside.

  3. 3

    In a large pot, chop the onions and add the chicken pieces and vegetables that take longer to cook, like carrots, turnips, and cabbage. Add the spices, oil, salt, a bunch of cilantro and parsley, and enough water. Cover the pot, preferably using a pressure cooker.

    Once it boils well, add the remaining vegetables and cover again.

    Now it's time for the couscous, but honestly, I'm not sure how to explain it, haha. The important thing is that the picture will clarify what's meant. This is the pot I used to steam the couscous. Fill it and place it where the steam comes out.

    Or you can use this because it's widely available and known.

    The couscous is steamed twice.

    After the first steaming, place it in a large dish.

    When it cools a bit, drizzle with olive oil and a little salt, and mix by hand.

    Return it for a second steaming.

    Once it's done steaming and the vegetables are cooked, there should be enough broth to pour over the couscous.

    Take a large serving dish and place the couscous in it this way, then add the chicken and vegetables and pour the broth over it.

    Note: You can put the broth in a bowl on the table for anyone who wants more broth.

    Sorry if anything wasn't clear. I'm trying to speak in a mixed language from our Eastern brothers because the Moroccan dialect is hard to understand. Also, my husband is Egyptian, may God protect him, and I learned good Egyptian from him, haha.
