  • 3/4 cupsmooth peanut butter
  • 1/4 cupsoy sauce
  • 3 tspchili paste
  • 2 tbspbrown sugar
  • 2limes, juiced
  • 1/2 cuphot water
  • 1 clovegarlic, minced
  • 1 tsprice vinegar
  • 1 tspground ginger
  • 1/2 tspsesame oil
  • 1/2 lbthin spaghetti, fully cooked and drained
  • 2boneless, skinless chicken breast, fully cooked and sliced
  • 2carrots, julienned
  • 1 smallcan water chestnuts, drained
  • 1handful chopped peanuts, for garnish
  • 1 cupfresh bean sprouts

Steps

  1. 1

    To make sauce, combine first 10 ingredients in a small bowl and mix until blended. Refrigerate until needed.

  2. 2

    Blanch carrots in boiling water for about 3 minutes, adding fresh bean sprouts in the last 1 minute. Place in a large bowl with the cooked pasta, sliced chicken, and water chestnuts.

  3. 3

    Pour the sauce over the pasta and toss until coated. Garnish with peanuts, serve, and enjoy!
