This is one of those meals momma taught me so I would start.... just a simple country meal I usually serve with sweet cornbread or flaky southern biscuits...:-* it can be served with butter noodles or herb pilaf.... it is comfort food at its best!!!!!
Cooking Instructions
- 1
make a spice bundle with either cheese cloth or a nylon stocking.... the mesh should be very tight.. set aside...
- 2
take your chicken thighs or even legs.... IF U ARE USING A WHOLE CHICKEN I SUGGEST IT BE CUT INTO PIECES
- 3
DEBONE YOUR CHICKEN THIGHS AND REMOVE SKIN
- 4
place chicken and veggies in a mixing bowl with the 2 T of oil,,,,
- 5
sprinkle them with salt, pepper, garlic powder, paprika.... and mix seasonings over chicken and veggies by hand and really rub seasoning in..
- 6
I use my heavy bottom dutch oven or cast iron dutch oven.. put a little oil in the pan and allow to get hot.... flick a little flour in it to see if it sizzles..,
- 7
dredge only chicken pieces in flour..,, shake them so that loose flour falls off..,,fry the thighs until they are brown, THEY ARE NOT DONE!!!! remove from pan and place on a non-porous surface. let sit.....
- 8
pour out oil in pan should just be a little in the bottom...,add celery, onion and bell pepper (can use red and yellow which are sweeter) scrape up any bits...turn pan to med and stir until semi sift.... about 4-6 minutes. put chicken and juices back in pot... and 3 cups chicken broth... ADD SPICE BUNDLE..... and let cool for 20 min take lid off and cook for another 5-7 minutes,., just until liquid is gone.
- 9
if u want to use 2 1/4 cup broth and 1/4 cup white wine like Chardonnay.
- 10
**** TASTE BROTH TO SEE IF U NEED MORE SEASONING. remove bundle and discard...,

Sheree's Grandma's Chicken and Rice Bake (Copycat) Sheree's Grandma's Chicken and Rice Bake (Copycat)
My husband loves the Stouffer's Grandma's Chicken Bake, but it only comes in a family size... And it just isn't big enough. I played around until I actually like mine better. This is perfect for a FREEZER CASSEROLE....do not add corn flakes until ready to bake. Sometime a bake chicken or have leftover turkey. I bake a lot of chicken in one day and de- bone so that it is fixed for quesadillas, chicken salads etc. I freeze the done chicken to help with time. Baked or rotisserie chicken taste much better... Sheree's Beef Pot Pie Sheree's Beef Pot Pie
I have lupus and have had a stroke, so I try to cook flavorful one pot meals. I consider myself a country cook. I can make a meal out of almost anything in the cabinet. My recipes are simple but taste good.. But a recipe is a road map... You can make any of them your own... My mom taught me how to cook... And her mother taught her.... But it may taste different because of how it's cooked... MsKipper -
Easy Braised "Teriyaki" Chicken Easy Braised "Teriyaki" Chicken
Our kids love the flavor of regular Teriyaki Chicken, but sometimes I'm not up to the work of it. This braise hits all the notes and makes my life easier.Since "yaki" refers to a direct heat cooking method like grilling, griddling, or even some kinds of pan frying, it wouldn't be quite accurate to call a braised or stewed dish a something-yaki, but this recipe generally mimics the familiar flavor profile we've come to identify with Teriyaki Chicken, so there you have it - Braised "Teriyaki" Chicken. That step to brown and crisp the skin under the broiler is bonus, but in the summer heat, you might prefer to use skinless chicken and skip it. You'll miss out on the skin, but you'll save a little time, energy and discomfort, and you'll still have something delicious and family-friendly to serve up. x -
