Ingredients

  • 6- small size brinjal
  • 3 table spoon- oil
  • 1/2 teaspoon- mustard seed(rai)
  • 1/4teaspoons- fenugreek seeds(methi)
  • 1- chopped onion
  • 2 tablespoon-coriander leave chopped
  • 1tablespoon-ginger garlic paste
  • 1tablespoon- onion paste
  • 1/2teaspoons-turmeric powder
  • 2- tomato fine chopped
  • 1teaspoon-coriander powder
  • 1teaspoon- jeera powder
  • 1teaspoon-red chilli powder
  • 1/2 teaspoon-garam masala powder
  • leavesFew curry
  • to tasteSalt

Steps

  1. 1

    Firstly take the cut brinjal and put pinch of salt in brinjal

  2. 2

    Heat oil in pan and fry the brinjal in medium flame

  3. 3

    Cover and simmer for 2-4 minutes or till they are half cooked

  4. 4

    Take off and keep aside

  5. 5

    Now in the same pan add mustard seeds and methi allow to slputler

  6. 6

    Add onion and saute well then add ginger gralic paste onion paste also

  7. 7

    Till it light brown then add chopped tomato and saute it well

  8. 8

    Add red chilli powder,turmeric powder, coriander powder, jeera powder and garam masala powder

  9. 9

    Then add 1cup water and mix gently,cover and simmer for 5 minutes

  10. 10

    After till cook the masala and add fryed brinjals and cook the brinjal gets cooked completey

  11. 11

    For garnish use chopped coriander leaves
