Steps

Firstly take the cut brinjal and put pinch of salt in brinjal

Heat oil in pan and fry the brinjal in medium flame

Cover and simmer for 2-4 minutes or till they are half cooked

Take off and keep aside

Now in the same pan add mustard seeds and methi allow to slputler

Add onion and saute well then add ginger gralic paste onion paste also

Till it light brown then add chopped tomato and saute it well

Add red chilli powder,turmeric powder, coriander powder, jeera powder and garam masala powder

Then add 1cup water and mix gently,cover and simmer for 5 minutes

After till cook the masala and add fryed brinjals and cook the brinjal gets cooked completey

For garnish use chopped coriander leaves
