Steps

Cut baingan in halves. Half cut from center. Sprinkle salt, red chilli powder, turmeric. Keep aside for 15 minutes.

Cut potatoes in 4 pieces. Wash it with water. Heat oil in a Kadhai. Stir fry potatoes until golden & tender. Sprinkle salt. Transfer it into dish.

Add some more oil in same Kadhai. Add marinated baingan. Stir fry until cooked.

Add fried potatoes. Saute both.

Mix all dry ingredients in a bowl. Add in baingan & aloo. Add 2 tsp water or oil. Saute all for 2-3 minutes.

Garnish with coriander leaves. Serve with chapati.
