Vegetable fried rice and vegetable stew

If you are bored of the usual white or yellow rice this is the recipe for you. Plus the vegetable stew is easy to cook and can be eaten with almost anything.

If you are bored of the usual white or yellow rice this is the recipe for you. Plus the vegetable stew is easy to cook and can be eaten with almost anything.

Bring to boil water, salt to taste and some oil. Once boiled add the rice. When the rice is cooked and ready to eat, set aside.

In a separate cooking pan add oil, onions, garlic and ginger. Let it cook slightly then add the carrots, very little salt (because the rice already has salt), black pepper and peas. Let it cook for 2 minutes then add soy sauce. Make sure the vegetables are still crunchy.

Add the cooked rice in the cooking pan that has the vegetable mixture. Turn the heat to low. Do not mix the rice and vegetable mixture with a cooking spoon instead flip it up and down (like the way you would use a tray to remove dirt from rice or lentils) for some minutes. The rice will mix evenly with the vegetable mixture. Leave it on low heat for 5 minutes then switch off.

In a separate cooking pan add cooking oil, onions, ginger, garlic, rosemary, turmeric, salt, carrots, zucchini, tomatoes and some water. Let it cook until ready then add coriander.

When the vegetable stew is ready, serve with the fried vegetable rice. Enjoy!!
