Wash the Okra very well.fresh ones are soft not hard

Cut them into pieces

In a pan add 2 teaspoon of cooking oil.fry the onions to golden brown.add the Okra and salt to taste.stir and remove after 5 minutes

Remember it is a vegetable so it's not supposed to over cook.The crunchier the better

In a pan add cooking oil and once it's hot add the washed fish and deep fry

In a pan fry the onions,add the cupsicum then tomatoes and carrots.cover to let the tomatoes be soft.add 1/2 a cup of water and salt to taste

Once it has heated add the fish.let it simmer for 10 minutes

Serve with ugali while hot
