
Spring green risotto
Another staple from my mother's food lexicon.
Steps

Heat oil and saute onion and garlic until onion is soft

Set broth to simmer
- 3
Add rice and stir for 3 to 4 minutes

Add broth 1/2 to 1 cup at a time. Stir until absorbed. Repeat until about 1 cup is remaining.

Add spinach, and stir with last cup of broth until absorbed.

Finish with thyme and parmesan.
